Jack-o-Lantern Rice Cake Treat

Ingredients

  • 1 large sweet potato, peeled and cubed
  • 1 tablespoon butter
  • 2 tablespoons sugar
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1 medium apple, peeled and chopped
  • 2 tablespoons 2% milk
  • 1 tablespoon maraschino cherry juice
  • 16 each milk chocolate kisses
  • 1/4 cup raisins
  • 8 caramel rice cakes

Directions

  1. In a small saucepan, add sweet potatoes and enough water to cover them. Bring to a boil, reduce heat to medium. Simmer until tender, 15-20 minutes. Drain; set aside.
  2. In the same pan, melt butter over low. Add sugar, cinnamon, allspice and pumpkin pie spice. Add apple slices, cover, cook until tender, 4-5 minutes. Add sweet potatoes and milk.
  3. Remove from heat. Using an immersion blender or high powered blender, puree until smooth. Add cherry juice; stir to combine. Refrigerate until cold, about 1 hour.
  4. Spread sweet potato mixture over rice cakes, decorate with milk chocolate kisses for eyes, and raisins for mouth so design resembles a jack-o-lantern.
