Salmon wasn’t one of our favorite fish until I tried it in this salad with my husband’s homegrown tomatoes. It turned us into huge salmon fans! —Anne Finch, Birmingham, Alabama

Ingredients

  • 1/4 cup reduced-fat mayonnaise
  • 1 green onion, chopped
  • 1/2 teaspoon lemon juice
  • 1/8 teaspoon dried tarragon
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 (4 to 6 ounces each) salmon fillets
  • 1 teaspoon olive oil
  • 4 cups torn romaine
  • 1 large tomato, chopped
  • 3 bacon strips, cooked and crumbled
  • Salt and pepper to taste

Directions

  1. In a small bowl, combine first 6 ingredients until well combined; set aside.
  2. Preheat broiler. Place salmon on a broiler pan, brush with olive oil; sprinkle with salt and pepper. Broil 3-4 in. from heat 7-9 minutes until a thermometer reads 145°.
  3. Divide lettuce among two plates; sprinkle with tomato and bacon. Top with 1 piece of salmon; drizzle with dressing.
