Turn premade pie crust and cherry pie filling into these adorable love letter hand pies. No one will want to return to sender!

Whether you’re celebrating a romantic Valentine’s Day or a fun Galentine’s Day with friends, these edible “love letters” are the adorable mini pies you need to add to your Valentine’s dessert menu. The best part is that you only need a handful of ingredients to make something that looks like it took you all day.

I was inspired by this TikTok video and wanted to recreate it using convenient shortcuts like refrigerated pie crust and a can of cherry pie filling. This is one scenario where I really like the texture and flexibility of a rolled refrigerated pie crust. It folds perfectly into the envelope shape I was going for. And if you have leftover cherry pie filling from the can, there are a lot of genius ways to use it up. Of course, you could always go the from-scratch route and make your own double pie crust and a filling from our cherry hand pies.

How to Make Cherry Pie Love Letters

Ingredients

  • 1 box (15 ounces) refrigerated pie crusts
  • 1 can (21 ounces) cherry pie filling
  • 1 egg
  • 1 tablespoon water
  • Powdered sugar, for dusting

Directions

Step 1: Cut the crust

Preheat oven to 450°F.

Thaw the refrigerated pie crusts according to the package directions, and unroll them on your work surface. Trim the circle into an 8-by-8-inch square, then cut that into four 4-by-4-inch squares. Use a small heart-shaped cookie cutter to cut four hearts into the excess scrap on the sides.

Step 2: Add filling

Place the squares on a parchment-lined baking sheet, positioned in a diamond shape. Scoop about seven or eight cherries from the can of cherry pie filling and spoon them into the center of the diamond. Fold in the two sides, and fold up the bottom to resemble an open envelope. Pinch the seams to seal. Place a heart in the center of each envelope.

Step 3: Brush with an egg wash

In a small bowl, whisk together the egg and water. Brush it over the assembled love notes.

Step 4: Bake and serve

Bake the treats for 12 to 15 minutes, or until golden brown. Dust them with powdered sugar, and remove them to a wire rack to cool before serving.
