IF YOU’VE THROWN a pizza party at your place, you know that the side dishes are kind of an afterthought. Because when you’re toiling away over the grill or a fancy pizza oven, who has time to pull together a salad?
This recipe solves all that by putting the salad on top of the pizza. Credit genius chef behind the recipe: Wylie Dufresne. You may recognize his name from his more experimental restaurant concepts, but Dufresne recently opened Stretch Pizza in NYC, where he’s whipping up creative pies using his high-end chef background.

Ingredients
- 1 heaping Tbsp grated garlic
- 1 egg yolk
- 1/2 c. Dijon
- 1/4 c. lemon juice
- 1 Tbsp. Worcestershire sauce
- 1/2 c. plus 1/4 cup grated Parmesan
- 2 anchovy fillets
- 1 c. light olive oil
- 1 (13-oz) dough ball, at room temp
- High-quality jarred tomato sauce
- 6 oz. shredded low-moisture mozzarella
- 2 Romaine hearts, chopped
- 2 c. Caesar croutons
- 2 1/2 c. cooked chicken, diced

- Step 1Preheat your grill to high, indirect heat, lid closed.
- Step 2In a food processor, add the garlic, yolk, mustard, lemon juice, Worcestershire, ½ cup of the Parm, and anchovies. Blend on low, drizzling in the olive oil until emulsified. Season with salt and pepper. Set aside.
- Step 3On a lightly floured peel, stretch the dough to just over 14 inches. Slide the dough over direct heat and grill, lid open, turning every 15 to 20 seconds, about 1 minute. Then, using tongs, flip and slide over indirect heat. Top sparingly with the tomato sauce, mozzarella, and remaining Parm, and cook, lid on, until the crust is done, 1 minute more. Using tongs, slide the pizza back over direct heat and grill, rotating it every 15 to 20 seconds for even charring, 1 minute more.
- Step 4Transfer the crust to a wire rack to cool for 2 minutes. In a large bowl, quickly combine the romaine, croutons, chicken, and some of the dressing (you’ll have a good portion left over). Toss to combine, slice the pizza, and scatter the salad on top.
